3 Autumn Inspired Recipes
1. Pork with Chestnuts and Plums
Materials:
- 1 kg of pork (preferably from the neck)
- 200 gr. chestnuts (boiled and peeled)
- 150 g prunes (stoned)
- 1 finely chopped onion
- 1 clove of garlic
- 200 ml white wine
- 2 tablespoons of olive oil
- 1 bay leaf
- Salt, pepper, thyme
Implementation:
- Sauté the pork in the olive oil until it gets colored on all sides.
- Add the onion and garlic and continue sauteing.
- Deglaze with the wine and add the bay leaf and thyme.
- Add the plums and chestnuts and cook on low heat for 1-1.5 hours.
- Serve with pilaf or mashed potatoes.
2. Sweet pumpkin pie
Materials:
- 1 kg pumpkin (grated)
- 200 gr. sugar
- 100 g walnuts (grated)
- 1 teaspoon of cinnamon
- 1 package of puff pastry
- 150 gr. butter (melted)
Implementation:
- In a bowl, mix the pumpkin with the sugar, walnuts and cinnamon.
- Lay out half the crust sheets on a baking sheet, buttering them in between.
- Add the pumpkin mixture and cover with the remaining leaves.
- Bake at 180°C for 45 minutes or until golden.
3. Mustalevria
- 1 liter of must
- 100 gr. flour
- 50 g walnuts
- 1 teaspoon of cinnamon
Implementation:
- Boil the must and add the flour little by little, stirring constantly.
- Let it simmer until the mustard thickens.
- Remove from the heat and add the walnuts and cinnamon.
- Allow to cool before serving.
