Recipe to make authentic sheftalies:
Seftalies Cypriot dish Traditional, made of minced meat that is wrapped in Caul fat and grilled.
Materials
1 kg minced meat (pork or a mixture of pork and beef)
2 onions, grated or dried
2 tablespoons dried mint
1 tablespoon dried thyme
1 tablespoon dried parsley
1 slice of bread, soaked and drained
1 egg
1 tablespoon of olive oil
1 teaspoon cumin
Salt and pepper
Caul fat for wrapping
Instructions
In a large bowl, mix the minced meat with the grated onion, chopped parsley, soaked and drained bread, egg, olive oil, cumin, salt and pepper.
Knead the mixture well until smooth.
Soak the bolia (Caul fat) in warm water to soften it and make it pliable.
Cut the Caul fat into pieces that are large enough to wrap the seftali.
Take small amounts of the minced meat mixture and form them into cylindrical shapes (about 10 cm long and 2.5 cm in diameter).
Wrap each mince roll with a piece of velcro.
Baking
Heat your grill (charcoals or grill) to medium to high heat.
Place on the grill and cook, turning occasionally, until golden brown and cooked through, about 20-25 minutes.
Serve the seftalies hot, accompanied by pies, tomatoes, cucumbers, onions and lemon juice. You can also accompany them with tzatziki or any other sauce of your choice.
