Stuffed courgettes are one of the most favorite dishes of Greek cuisine, they combine the freshness of vegetables with the taste of minced meat and herbs. This recipe is ideal for any season and can be served either as a main course or as a side dish. We are starting to prepare them!
Stuffed courgettes Materials
- 8 large fresh courgettes
- 400 gr. minced meat (beef or mixed)
- 1 large onion, chopped
- 2 cloves of garlic, melted or garlic powder
- 1/2 cup Carolina rice
- 1 cup tomato, grated
- 1/4 cup olive oil
- 2 tablespoons dried parsley
- 2 tablespoons dried dill
- Messolonghi salt and black pepper
- 1 egg
- 1 lemon (juice)
- 2 cups vegetable broth or water
Instructions
Preparation
- Wash the zucchini and cut off their ends.
- Using a sharp knife or spoon, scoop out the pulp from the zucchini, leaving about 0.5 cm thick on the wall. Set the pulp aside for later.
Stuffing
- In a saucepan, heat the olive oil and sauté the onion until soft.
- Add the garlic and minced meat, and sauté until it changes color.
- Add the grated tomato and mix.
- Then the rice, parsley, dill, salt and pepper.
- Mix well.
- Cook the filling for about 10 minutes, until the liquids are absorbed.
Fill
- Stuff the courgettes with the mince mixture, leaving some space at the top for the rice to rise.

Cooking
- Add the vegetable broth or water to the pot until it covers the zucchini halfway.
- Cover the pot with the lid and cook on medium heat for about 45-50 minutes, until the courgettes are tender and the rice is cooked.
Egg lemon
In a bowl, beat the egg with the lemon juice.
Gradually add some of the hot stock to the egg mixture, stirring constantly to prevent curdling.
Pour the eggnog into the pot and gently shake to coat.
Serving
Serve the zucchini hot, pouring over some of the sauce from the pot.

Garnish with additional parsley if desired.
Tips
- You can add different herbs like mint or basil for flavor variations.
- Instead of minced meat, you can use mushrooms for a vegetarian version.
